Friends and family are always amazed by how really delicious this simple salad is. It works well with almost everything. I especially like it with pasta. Noted on 2/3/2012

Method

  1. In a large, shallow salad bowl, mix the shallots with the vinegar. Set aside for least 15 minutes and up to 2 hours to soften the shallots.
  2. At serving time, add the greens and toss to coat with the vinegar and shallots. Add the cream, tossing until everything is coated. Taste and add more vinegar or salt if needed and serve.
