Guacamole

Description
Sometimes, when we want some guacamole we just mash some avocados with a little Sadie's Salsa (the best jarred salsa I've ever tasted, we buy it by the gallon and you can get it here). When we feel like something a little more special, this is the recipe I go to.

Ingredients
  • 1/2 small onion, very finely chopped
  • 1 jalapeƱo chile, or more, to taste, stemmed and very finely chopped
  • 1 medium tomato, cored and very finely chopped
  • 3 clove garlic, peeled and very finely minced
  • 1 small handful fresh cilantro leaves, chopped
  • 3 medium ripe avocados
  • Salt, about 1 teaspoon
  • 1/2 lime, juiced, or more, to taste
  • Garnishes
  • Additional chopped onion
  • Additional chopped fresh cilantro leaves
  • Sliced radishes
  • Mexican queso fresco, just a little, crumbled
Method
  1. In a medium bowl, mix together the onion, chiles tomato, garlic and cilantro.
  2. Close to the time you are going to serve, halve the avocados lengthwise. Peel and pit the avocados and add the halves to the bowl.
  3. Using your hands, or a potato masher, roughly mash the avocado while mixing in the other ingredients, making a coarse, thick mass. Season with salt and enough lime juice to add a little zing. Cover with a sheet of plastic wrap pressed directly onto the surface of the mixture. Set aside for a few minutes to let the flavors blend.
  4. Sprinkle the guacamole with a little chopped onion, cilantro, radish slices and crumbled fresh queso and serve.

Makes about 3 cups
Ingredient Notes
Avocados - We are lucky in New Mexico because there is such a big demand for high quality Hass avocados. Those are really the only good choice if you are going to go to the trouble of making this. When ripe, the avocados should just slightly yield to gentle pressure.
Advance Prep
Make the guacamole right before you plan to serve it. You can let it sit with plastic wrap pressed on top for maybe 20 minutes or so. Have all your ingredients and garnishes ready before you mash the avocados.
Variations
The tomato, garlic and cilantro are all optional, but nice.
