Savory Dipping Sauce

Description
This savory dipping sauce can accompany several different pupu platter items at your next Tiki party.

Ingredients
  • 2 tbsp vegetable oil
  • 1/2 small onion, minced
  • 2 clove garlic, peeled and minced
  • 1/4 red bell pepper, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp sugar
  • 2 tsp dry mustard powder
  • 2 tsp red Chile powder, or more, to taste
  • 1/2 tsp freshly ground black pepper
  • 3 tbsp tomato paste
  • 1 cup water
  • 1/2 cup cider vinegar
  • 1/4 cup Worcestershire sauce
  • 3 tbsp soy sauce
Method
  1. In a small frying pan, heat the oil over medium-high heat. Add the onion and sauté until translucent, 4 or 5 minutes. Add the garlic, bell pepper and ginger and sauté until tender, 4 or 5 more minutes. Sprinkle in the sugar, mustard powder, chile powder and pepper and cook, stirring frequently, until fragrant, a matter of a minute. Add the tomato paste, water, vinegar, Worcestershire sauce and soy sauce. Cook, stirring frequently, until the sauce comes to a boil. Lower the heat and simmer until the sauce has thickened a bit, about 3 minutes. Allow to cool. Refrigerate, covered, for up to 2 weeks.
