19oz beef sirloin, trimmed and cut into 1/4- to 1/2-inch cubes
1 3/4cup Green Chile Sauce (see notes)
4 jalapeño chiles, cut into thin rings
1/2cup grated Monterey Jack cheese
1/2cup grated sharp Cheddar cheese
4tbsp chopped green onions
4sprig cilantro (to taste)
Method
In a heavy saucepan or Dutch oven, heat the lard over medium-high heat. When hot, add the cubed beef and brown on all sides. Add the Green Chile Sauce and jalapeño rings to the pot and simmer very quietly, uncovered, for 30 minutes.
To serve, ladle into bowls and top with a sprinkling of the two cheeses, green onions and a sprig of cilantro.
