Description
This is my favorite chile of all time.

Ingredients
  • 3 tbsp lard
  • 19 oz beef sirloin, trimmed and cut into 1/4- to 1/2-inch cubes
  • 1 3/4 cup Green Chile Sauce (see notes)
  • 4 jalapeño chiles, cut into thin rings
  • 1/2 cup grated Monterey Jack cheese
  • 1/2 cup grated sharp Cheddar cheese
  • 4 tbsp chopped green onions
  • 4 sprig cilantro (to taste)
Method
  1. In a heavy saucepan or Dutch oven, heat the lard over medium-high heat. When hot, add the cubed beef and brown on all sides. Add the Green Chile Sauce and jalapeño rings to the pot and simmer very quietly, uncovered, for 30 minutes.
  2. To serve, ladle into bowls and top with a sprinkling of the two cheeses, green onions and a sprig of cilantro.
