3 jalapeño chiles (or more, to taste, roughly chopped)
10clove garlic (roughly chopped)
1cup ketchup
3/4cup Worcestershire sauce
3/4cup strong black coffee
1/3cup unsulphered dark molasses
1/4cup apple cider vinegar
1/4cup fresh lemon juice
1/4cup pure chile powder
2tbsp prepared mustard
1 1/2tsp ground cumin
1 1/2tsp salt

Warm the oil in a saucepan over medium heat. Add the onions, chiles and garlic and sauté over medium heat until everything is softened. Mix in the remaining ingredients and bring the sauce to a simmer. Cover and cook over very low heat for 35 minutes.

Allow the sauce to cool to room temperature.
Purée the sauce in a food processor or blender. Refrigerate the sauce overnight to allow the flavors to blend.
