This Peanut Sauce is super easy to make and is good on lots of stuff. Toss it with noodles (cold or hot) for instant peanut noodles. It might be necessary to thin the sauce with a little water.

Add some protein (can of shrimp, some cooked chicken or even tofu) and some lightly sautéed vegetables (snow peas, red pepper, shiitakes) for a simple pretty healthy meal.

It’s good as a dipping sauce for veg or flat bread like pita bread or Indian naan. Have fun.

Method

  1. In a medium-sized bowl, combine the peanut butter and warm water. Whisk until well blended and smooth. Stir in the cayenne, then stir in the vinegar, soy sauce, garlic and scallions.

    If you want to get fancy, you could chop some peanuts and use them as a garnish. You could also add a little lime juice when stirring in the vinegar and soy.
